Pure dark chocolate with Enoki and Shimeji Mushrooms over a very rare white-beaned Criollo cacao from Chiapas, México, chocolate of well-defined aromas, high acidity, and citric notes. Thanks to the umami from the Brown Shimeji and Enoki mushrooms, with their nutty and fruity accents, this is a bar with interesting and deep well-balanced flavors.
Brown Hon Shimeji mushrooms have been growing in the forests of Eastern Asia since ancient times, and the first cultivated Brown Hon Shimeji mushroom was patented in 1972 by the Takara Shuzo Company. These mushrooms are known for their medicinal properties.
Enoki Mushrooms are compounds with a lot of essential nutrients, antioxidants, fiber, and B vitamins. They have historically been used in various traditional forms of medicine to boost the immune system.
