Brown toasted Malt
Collaborating with artist Harold Ancart on this bar led us to focus on the flavor of malted grains. We explored the interesting texture and flavor of brown  malt and found it perfectly matched with our white bean heirloom cacao chocolate. The adolescent brown malt with the cacao results in something luminescent: sweet, bitter, crunchy & tangy; the malt flavor is maintained, even covered in chocolate.
Beer and chocolates are the two specialties of my country. I am naturally fond of both. Malted grains are predominantly used to brew beer or for distilling alcohol. Their flavors depend on the type of cereal being used and on the level of roasting. It is untraditional to incorporate malted grains directly into food but having visited many breweries and distilleries in the past I had the intuition that it would make an excellent pairing with the high quality of chocolates Rafa has been making over the last 11 years.”
